A mugcake treat that’s vegan, gluten free AND delish?! I thought there’s no way but I was proved so wrong!
I came across @basicswithbails on Instagram and I saw she had a recipe for 5 Minute Vegan & Gluten Free Chocolate Peanut Butter Mugcake. Now I’m not much for chocolate (salty chips are my thing!) but the fact that you could make it quickly and in a mug had me intrigued. And since I’d never made a mugcake before, I decided to give it a try…
YUM-MY!!!
You really won’t be disappointed. And because it’s just a small amount, it’s enough to satisfy and then it’s done.
I followed her recipe (see my notes in the ingredients) and took step by step photos of how I did mine.
5 Minute Vegan & Gluten Free Chocolate PB Mugcake

Ingredients-
- 1 Tbsp coconut flour (I used Bob’s Red Mill)
- 1 Tbsp cocoa powder (I used Rodelle Organics from Costco)
- 1 Tbsp peanut butter (I had the Kraft one on hand but you can use the natural kind too)
- 1 Tbsp vegan chocolate protein powder (I used the Organika collagen since that’s what I had)
- 1/2 banana (approx. 3 Tbsp)
- 1/4 tsp baking powder
- 1-1/2Tbsp water (I added about 3 Tbsp because I liked it more moist)
- a bunch of chocolate chips (I added about 1/4 cup but add more if you like it more chocolatey)
Making your 5 Minute Vegan & Gluten Free Chocolate PB Mugcake-
Add the flour, cocoa powder and baking powder to a
mug or small microwavable dish/bowl.
Mix with a spoon or fork until well blended.
Add the peanut butter to the dry ingredients and mix until fully blended.
Combine the water and bananas in a separate bowl and mix well until mushy.
Add the banana/water mixture to your mug and blend all together.
Sprinkle chocolate chips and blend one more time so you get
chips throughout the mixture.
Microwave for about 90 seconds.
I put mine in for another 30 seconds to melt the chocolate chips a bit more.
Now you get to spoon and ENJOY your yummy mugcake!!
Add some ice cream on top for an extra yummy treat.
You can even add nuts or peppermint chocolate chips for a holiday version.
Doesn’t think look good? I’d honestly never had such a tasty gluten free treat that was so moist.
